Diabetic Friendly Desserts – Cream Cheese BrowniesYield: 32 brownies

Oven Temperature: 350 degrees F
1 1/2 cups sugar
1/2 cup plus 4 TBSP butter, softened (or use margarine to reduce the saturated fat)
2 large eggs
2 large egg whites
2 TBSP vanilla extract
1 cup all-purpose flour
1/2 cup unsweetened cocoa
2 (8-ounce) block 1/3 less fat cream cheese, softened
1/2 cup “measures-like-sugar” calorie free sweetener
1/2 cup 1% low-fat milk
- Preheat oven to 350 degrees.
- Beat sugar and butter with a mixer at medium speed until light and fluffy. Add egg, egg whites, and vanilla; beat well. Gradually add flour and cocoa, beating well. Pour into an 8-inch square pan coated with cooking spray.
- Beat cream cheese and sweetener with a mixer at high speed until smooth. Add milk; beat well. Pour cream cheese mixture over chocolate mixture.; stir together using the tip of a knife to create a marbled effect.
- Bake at 350 degrees for 30 minutes. Cool completely in pan on a wire rack. Cut into square.
